Allow all user-owned directories to be bind-mounted by docker (so we
don't have to know which user we'll be running as at runtime).

Remove custom apache2 config and use setup-apache.sh.

And install the php-zip package.

Required by Roundcube.

Fixes the must-update-db comparison, which would previously fail.

The container setup script copies the Roundcube configuration files in
place, from the /etc/roundcube directory, and runs database migrations
if necessary.
